These can either be rolled and cut with a cookie cutter * or made into balls and slightly flattened with your hand ** Use whatever color/flavor gelatin that's appropriate for the holiday you're baking for ** EASY and pretty **
JELLO COOKIES
3/4 c butter
1/2 c sugar
3 oz (85 g) pack of any flavor jello
2 eggs
1 tsp vanilla
2 1/2 c flour
1 tsp baking soda
1 tsp salt.
Preheat oven to 350. Line cookie sheets with parchment paper.
Cream butter, sugar, jello and eggs (electric mixer works best). Mix in rest of ingredients and mix well. Roll into balls and put on prepared cookie sheet. (OR * you can roll the dough on a lightly floured board and cut with floured cookie cutters. Metal cutters work best, since it's a stiffer dough) Flatten with a fork.
Sprinkle with corresponding colored sugar (if desired). Bake for 6-8 minutes.
