Amounts of the veggies are approximate ~ adjust to what you have on hand (or what's in the grocery store)
HONEY MUSTARD SUPER SLAW
about 7-10 fresh Brussels sprouts (ends trimmed, and thinly sliced)
1 small or 1/2 large Napa cabbage (very thinly sliced) (NOTE: you can substitute very thinly sliced regular cabbage {about 1-2 cups}, if you want)
about 2-3 carrots (peeled and cut into thin matchsticks)
1 large bunch of fresh broccoli (cut into about bite-sized florets ~ thinly slice the stalks)
about 1-2 cups fresh kale (torn into bite-sized pieces)
about 1/4 to 1/2 sweet white or yellow onion ~ cut into very thin slices or small cubes
about 1/4 cup BACON crumbles (made fresh or buy pre-crumbled REAL bacon)
DRESSING:
about 1/4 cup bottled HONEY MUSTARD dressing (I used Lite)
about 2-3 TB apple cider vinegar
about 1-2 TB light agave nectar

Put the dressing ingredients into a large bowl and whisk to combine well. Then put all the slaw ingredients into the bowl and mix well (so that everything is coated). I use a rubber scraper, which works really well. You don't want your veggies "swimming", but if you added more veggies then you may need a little more dressing ~ so add more of whatever part of the dressing you want if it seems too dry after you mix it all together.
Store in a covered glass container in the refrigerator. This will last for several days.
