HONEY BALSAMIC Roasted ACORN SQUASH SLICES
1 Acorn Squash (or as many as you want ~ about 10 slices per squash)
about 1/3 cup extra-virgin olive oil
about 2 TB Balsamic vinegar
about 2 TB honey
about 2-3 tsp. Kosher or sea salt
The amounts aren't "carved in stone" here ~ use as much or little of each ingredient that your family likes

Preheat oven to 400 (If you're already cooking something at 375, that's fine too ~ just add on to the time needed ~ roast until the squash {including the outside} is soft and roasted-looking). Line a rimmed baking sheet with foil and spray generously with non-stick spray. Set aside.
Cut the squash in half and scoop out the seeds. Then slice into about 1/2" slices. If needed, trim the inside of the slices of any strings ~ set aside. (I get about 10-12 slices per Acorn Squash.)
Whisk together the rest of the ingredients in a shallow bowl. Dip the squash slices into the bowl (getting all sides) and then put them on the prepared baking sheet. Brush them with any leftover sauce, making sure to get the slices covered all over (even the outside peels).
Stick the pan into the oven and roast for about 40-50 minutes, or so ~ until even the outsides are soft and roasted-looking (they may not be pretty, but they'll sure taste good!). TURN THEM OVER after about 20 minutes (they'll brown up pretty quick from the honey ~ but even if they get "burnt" on one side, they'll still taste good. Just tell your family that they're "caramelized".).
You may want to use these instead of French fries as a side ~ how many people each squash will serve is up to you & your family ~ and depends on what other sides you're having with dinner.
