HONEY and HERB GLAZED ONIONS
2 medium white or yellow onions
1 tsp. Kosher or pink Himalayan salt
1 TB butter, melted
1/2 tsp. smoked paprika
2 TB tomato juice (V-8, Snappy Tom, tomato sauce or even ketchup will work)
1-1/2 TB honey
1 tsp. of any dried herb ~ to match whatever you’re making for dinner (basil, rosemary, thyme, tarragon, tarragon, sage, etc.)
Preheat oven to 350. Line a square pan with foil ~ spray with non-stick sprayl
Peel and cut onions in half (cross-wise). Put into prepared pan.
Whisk together the rest of the ingredients in a small bowl and pour over the onions.. Cover with foil and bake for 1 hour (or until onions are tender).
Great side with beef, chicken or pork.
1 onion half should serve 1 person (unless you’re my husband who loves onions, and will eat 2)
