Homemade CHOCOLATE Covered RAISINS and CRANBERRIES
1/4 cup chocolate chips (whatever type you like)
1-1/2 tsp. vegetable oil (i.e. Crisco)
1-1/2 cups raisins or dried cranberries
***
Line a baking sheet with parchment or waxed paper. Set aside
Put the chocolate chips and Crisco in a microwave-proof medium bowl and heat for 60 seconds on high in the microwave (NOTE: check white chocolate after 45 seconds). Stir really well with a small spoon or fork, until the chocolate is smooth and completely melted.
Now stir the raisins, 1/2 cup at a time, into the melted chocolate, until all the raisins are in there and completely coated with chocolate. Spread the chocolate covered raisins on the prepared baking sheet, in as thin a layer as possible. Refrigerate for about 15-20 minutes (or until chocolate has hardened). Break apart the raisins with your fingers.
If you have any leftovers, they should be kept in the refrigerator (Tupperware container is good).
