You can assemble them earlier in the day; then refrigerate and bake later. You can also bake them ahead and then just reheat (good if members of your family eat dinner at different times.
GREEN Ricotta CHEESE ENCHILADAS
1 15 oz. (or whatever your small container is) ricotta cheese
1 egg...………………………………..1 small can diced mild green chilies (drained), about 4 oz.
1 tsp cumin...………………………..1 tsp. garlic powder
1/2 tsp. dried oregano....................1/2 to 1 small fresh jalapeno, seeded & minced
1/2 tsp. black pepper...…………….1 tsp. Kosher salt
6-8 flour tortillas (mine said "large")
1 large can green enchilada sauce (mine was 19 oz., so about that size)
about 1-1/2 to 2 cups shredded cheese (I like all white with this, so use Mozzarella or a white cheese blend)
about 1-2 TB fresh cilantro, chopped
OPTIONAL GARNISH : sour cream ~ chopped/sliced fresh avocado ~ chopped cilantro

If you're going to bake this right away, preheat the oven to 375. ** Spray a 9" or 10" square pan with non-stick spray. Put about 1/4 cup of the green enchilada sauce on the bottom of the pan and spread it around. Set aside.
Combine ricotta cheese, egg, chilies, chopped cilantro, salt, pepper, cumin and the cheese (reserving about 1/2 cup) in a bowl. Lay out the flour tortillas on your counter and then divide mixture evenly on them. Roll them up tightly and put in the prepared pan. Sprinkle the 1/2 cup remaining cheese evenly over the top and then pour the rest of the enchilada sauce on top. Use a little spoon to be sure the enchilada sauce gets down into all the little crevices and ends of the rolled tortillas (and covers all the cheese). (The reason I do the cheese first is so that it doesn't get hard on top, but stays soft and gooey under the hot sauce.)
Bake at 375 about 30-45 minutes, or until cheese melts and it’s all really hot and bubbly. Garnish with sour cream, cilantro and chopped avocado. Makes 6-8 enchiladas
The enchiladas will reheat well in the microwave later (I cover them with a piece of waxed paper, so the cheese doesn't pop all over the microwave.)

TIP: When you cover anything with CHEESE to bake or warm up (waxed paper, foil), it's a good idea to spray the underside of the waxed paper/foil with NON-STICK SPRAY, so the melted cheese doesn't stick to it!! (remember this TIP when you cover casseroles with cheese in them too)
