1-1/2 cups chocolate wafer crumbs (Oreos are good to use)
2-3 wafers crumbled, or shaved chocolate (for garnish)
1/4 cup butter, melted
3 cups miniature marshmallows or 32 large ones
1/2 cup milk
1/4 cup green crème de menthe
3 TB white crème de cacao
1-1/2 cups heavy whipping cream, whipped to stiff peaks
few drops green food color, if desired
Heat oven to 350. Mix wafer crumbs and butter thoroughly and press down evenly on bottom and sides of a 9” pie pan. Bake 10 min; cool and set aside.
Meanwhile, combine marshmallows and milk in saucepan. Cook over low heat, stirring constantly until marshmallows melt. Cool thoroughly and add liquors. Gently fold marshmallow mixture into whipped cream; gently fold in food coloring.
Pour & spread in crumb-lined pan. Sprinkle extra wafer crumbs on top (or shaved chocolate). Chill at least 4 hours … OR freeze, and eat as a frozen pie (that’s our favorite way)
