Glazed WHITE CHOCOLATE Chunk MACADAMIA NUT COOKIES
1 cup (2 sticks) unsalted butter, softened...............................3/4 cup granulated sugar
1 cup packed dark brown sugar..................................................2 tsp. vanilla extract
2 large eggs........................................................................................3 cups all-purpose flour
3/4 tsp. salt........................................................................................1 tsp. baking soda
about 1 cup white chocolate, coarsely chopped into chunks (or you can use white chocolate chips)
1 cup macadamia nuts, coarsely chopped
GLAZE:
3/4 cup powdered sugar...............................................................caramel flavored liquid coffee creamer

Preheat the oven to 350. Line baking sheets with parchment paper.
Beat together the butter, granulated sugar and brown sugar with your mixer until well combined. Add vanilla and eggs and beat until the mixture is creamy and light in color, 2-3 minutes. Then beat in the salt and baking soda. Now, gradually stir in the flour ~ then beat just until it's combined. Add the white chocolate and macadamia nuts and mix.
I used a small cookie scoop to plop the balls on the cookie sheets (12-16) and then rolled them in my hand (so I could be sure they're all the same size and adjust them as needed).
Bake for 9-11 minutes, until they're just beginning to lightly brown at the edges. Let them sit on the pan a few minutes, before removing to rack to cool. Makes about 3-4 dozen.
GLAZE:
Gradually whisk the liquid coffee creamer into the powdered sugar in a small bowl (about 1/2 tsp. at a time), until it's a thick, smooth drizzle consistency. Drizzle on top of the cookies after you've put them on the rack (or paper), and add sprinkles, if you want.
