NOTE: If you can't find Pumpkin Spice Cookie Mix, Krustaez also has a fantastic lemon cookie mix (and just add a little cinnamon, nutmeg and cloves to it for Halloween).
Glazed PUMPKIN SPICE Halloween Cookies
1 package Krustaez Pumpkin Cookie mix (could substitute Lemon or Sugar cookie mix ~ but then add a little cinnamon, nutmeg and cloves to the batter).
1 egg.................................................................................1 stick (8 oz) butter, melted
about 3 TB Halloween sprinkles.............................about 1/2 tsp. cinnamon
Pumpkin Spice (or Caramel) liquid coffee creamer

Preheat oven to 375. Line baking sheets with parchment paper and set aside.
Beat together the cookie mix, eggs and butter in your electric mixer. Important to scrape down the sides, and be sure to get any dry mix that's settle on the bottom of the bowl! Then, mix in the Halloween sprinkles on low speed.
I used about 3/4-full cookie scoop for each cookie, and put about 12 on a cookie sheet. Bake for about 9-11 minutes, so that they're slightly firm on top but still soft. Let them cool a few minutes on the pan, then remove to a rack or paper to cool completely.
Meanwhile, whisk together the enclosed glaze packet (or you could use about 3/4 cup powdered sugar) with a little cinnamon and about 2 tsp. liquid coffee creamer. (The instructions calls for 3-1/2 to 4 tsp., but I found that too thin and had to add more powdered sugar and a little cornstarch to firm it up.)
Dollop some of the frosting on the just-about cooled cookies (it may drip down the sides a little) and sprinkle with more Halloween sprinkles (or you could stick one of those pumpkin candies on top).
I got 2 dozen, but that depends on the size you make them.
