Glazed LEMON KRISPIE BARS
1-1/2 cup all-purpose flour …………………....1 TB lemon jello powder (can be sugar-free)
1 cup sugar ~or~ regular white Splenda (NOT baking blend)
1/4 tsp Kosher salt …………………………......1 egg
1/2 cup (1 stick) unsalted butter, softened........1/4 cup lemon juice
1/2 tsp. baking powder.....................................1/4 tsp. baking soda (ONLY if using Splenda)
1 cup Rice Krispies (or generic)
NOTE: can substitute ORANGE or LIME for all lemon
Glaze
1 cup powdered sugar……………………..2 TB lemon/orange/lime juice

Preheat oven to 350°F. Grease/Spray 8” pan.
Beat the flour, sugar, jello powder, baking powder, baking soda, salt, and softened butter until combined.
In separate bowl, whisk together eggs and lemon juice until combined. Pour into flour mixture and beat at medium speed until smooth and creamy, about 2 minutes. Fold in Rice Krispies.
Pour into pan and bake for 18-25 minutes, or until just starting to turn golden around the edges and a toothpick inserted into the center of the brownies comes out clean. Allow to cool about 5 minutes before glazing. Don’t over-bake, or bars will be dry.
GLAZE: Whisk together powdered sugar and juice. Spread glaze over brownies
Sugar-free GLAZE: Just mix some canned sugar-free vanilla frosting with lemon juice to blend
