NOTES: The ingredients here are not "etched in stone". If your family likes it sweeter, add a little more honey and less lime juice (or substitute some pineapple juice for lime juice). ** Also, I don't like coleslaw "swimming" in dressing, so it will be barely coated (although as it sits in the refrigerator and sinks down a little, it will be more coated) ~ you can add more dressing if you like it that way better.
Fresh PINEAPPLE and CUCUMBER COLESLAW
1 cup fresh pineapple, chopped………………………...1 cup cucumber, chopped
1 bag coleslaw mix………………………………………2 TB lime juice
2-3 TB fresh cilantro, chopped………………………….1 tsp. Kosher salt
1 TB rice or white wine vinegar………………………...1/2 tsp. black pepper
1-2 TB honey

Toss together the pineapple, cucumber, cilantro and coleslaw mix in a large bowl.
Whisk together the rest of the ingredients in a small bowl ~ then fold into the coleslaw mix until it’s completely coated. Refrigerate.
