Fresh PEACHES and CREAM COBBLER * sugar or sugar-free
1 cup all-purpose flour……………………………2 tsp. baking powder
1/2 cup granulated sugar or plain white Splenda
1/2 tsp. salt…………………………………………1/2 tsp. ground cinnamon
1/2 cup milk (any kind ~ I like unsweetened vanilla almond milk ~ you could even use half-and-half, cream or flavored liquid coffee creamer)
4 medium fresh peaches (can add use nectarines and/or apricots too), sliced (or 2-3 giant or 4-5 small) ~ I like to leave the peel on, but you can peel them if you want
TOPPING:
1-1/2 cups water…………………………………….1 TB butter
1/2 cup granulated sugar or plain white Splenda
1/2 cup packed dark brown sugar or 1/4 cup brown Splenda blend
1/4 tsp. ground cinnamon

Preheat oven to 400°. Spray an 8” square pan with non-stick baking spray.
Combine flour, granulated sugar, baking powder, salt and cinnamon in a bowl. Stir in milk just until combined; fold in peaches. (It will be very thick.) Spread in prepared pan.
TOPPING: Combine water, sugars, butter and nutmeg in a large microwave-proof bowl (I use a large 1 qt. pyrex measuring container, so it won’t bubble over). Microwave on high for 1 minute; whisk and microwave another minute. Whisk and pour over peach mixture.
Bake until filling is bubbly and a toothpick inserted in topping comes out clean, 45-50 minutes. Serve warm or cold. This is so good, that 4 people will probably want to split the whole pan!
Of course, you can always add a scoop of vanilla ice cream on top of warm cobbler too, if you want a really decadent dessert!
