Fresh ORANGE MUFFINS * with sugar or sugar-free
1 tsp orange extract ……………………...……..........1 tsp baking soda
1/2 tsp salt ……………………………….....……... 3/4 cup sugar or regular white Splenda
1 egg……………………………………………........... 1/4 cup vegetable oil
3/4 cup yogurt, plain or orange or sour cream
1/2 cup milk, any kind (I like unsweetened vanilla almond or cashew milk best)

Preheat oven to 350. Line 9-12 muffin cups with liners. ** Cut orange into quarters and pulse in food processor until ground finely.
Thoroughly mix the flour, pulsed orange, baking soda, salt, and sugar. In a separate bowl, mix all the wet stuff. Add the wet to the dry, stirring just until combined. Spoon into lined muffin tins
Bake at 350 for 15-20 min until golden brown on top. Makes 9-12 regular-sized muffins
If desired, brush with glaze while still warm:
Optional Glaze:
Put 1/2 cup powdered sugar (or 1/2 cup white Splenda with 2 tsp cornstarch) into a small bowl. Whisk in orange juice (1 tsp at a time) (or add 2 drops of orange extract at the beginning, then whisk in milk gradually) until smooth glaze consistency. Brush on top of warm muffins.
