I'm not usually a fan of gluten-free, but these are INCREDIBLE! Ultra rich dark chocolate, with a little bit of ooey-gooey inside and crunch outside. No odd ingredients in here either ** |
Flourless DARK CHOCOLATE Chocolate Chip COOKIES
2-1/2 cups powdered sugar...........................................1 TB. cornstarch
1 cup DARK unsweetened cocoa powder..................... 1/2 tsp. salt
3 eggs.............................................................................. 2 tsp. vanilla extract
1 cup DARK chocolate chips
Preheat oven to 350. Line 2 baking sheets with parchment paper.
In a bowl, hand-whisk together the powdered sugar, cornstarch, salt and unsweetened cocoa powder until it's blended together well. Set aside.
Separate 2 eggs and put the egg whites into an electric mixer with whisk attachment. (You won't be using those 2 egg yolks, so save for something else). Whisk the 2 egg whites until soft peaks. Add the whole egg and vanilla to the egg whites, and whisk again until soft peaks.
Now add the dry ingredients into the mixer bowl with the whisked egg mixture. Change to your paddle attachment, and gently ( on low speed ) mix together until it's well blended (scraping down the sides and bottom, if necessary). Fold in the chocolate chips.
Drop by about a soupspoon-ful onto the cookie sheets. You should have 12 cookies on each cookie sheet. If you don't have enough cookies, or some are too big, gently scrape up the batter with a spoon and add to other cookies on the sheet (or make additional ones). I end up with exactly 2 dozen.
Bake for 12-14 minutes. I do one sheet at a time, but if you want to do them both, then be sure to rotate the positions of the sheets halfway through.
Remove from oven and let cool on the pan about 5 minutes. Then, carefully use a metal spatula to remove them a rack to cool completely. (It's important to put them on the rack to finish cooling, so the bottoms won't be too sticky) Please note that because of the beaten egg whites and sugar, the consistency can vary due to high humidity (they could take a little longer to bake, and to cool).
** In theory, the original recipe said these are about 110 calories apiece, but I can't guarantee that.
