1 small pkg. vanilla instant pudding mix
1 can (12 oz) evaporated milk
1 can (15 oz) pumpkin puree
1 tsp pumpkin pie spice (or 3/4 tsp cinnamon + 1/8 tsp each nutmeg & cloves)
whipped cream or topping (optional)
Beatpudding mix and evaporated milk according to package directions in large bowl; refrigerate for 5 minutes. Add pumpkin and pumpkin pie spice; mix well.
Spoon into dessert dishes. Refrigerate for 10 minutes or until ready to serve. Top with whipped topping, if desired. Makes 6-8 servings
