Baked BEEF TAQUITOS
2 cups of cooked beef or steak, sliced into thin strips
1 cup crumbled Mexican Queso Fresca cheese
1/2 cup prepared salsa………………….........………..1/2 cup sour cream
Salt and pepper to taste……………….........…………olive oil non-stick cooking spray
10 flour tortillas (about 8”) ~ or about 14 6” tortillas

Preheat oven to 350**. Line a rimmed baking sheet with foil and give a quick spritz of non-stick spray (for easy clean-up of drips during baking).
Combine steak, cheese, salsa, sour cream, salt and pepper in a large bowl. Mix to blend well.
Set out all of your tortillas, and put about 2 TB of the beef mixture in the center of each tortilla. Even up the amount of filling when you have filling on each tortilla. Then, push the filling towards one end of the tortilla and tightly roll them up. Put them (seam side down) on the baking sheet. Give a quick spray of non-stick baking spray.
Cook about 17-20 minutes (just until they start to turn brown). (NOTE: I only had uncooked tortillas, so I raised the temperature to 400 and added a few extra minutes).

You can use some extra salsa (or mix it with some extra sour cream) for a dipping sauce. Guacamole is also a good dipping sauce. Or, make CHIPOTLE DIPPING SAUCE:
1/2 cup mayonnaise .............................................. 2 tsp. lime juice
1 tsp. sugar.............................................................1-2 tsp. fresh chopped cilantro **
1/2 tsp. paprika (smoked is best)..............................1/2 tsp. plain white vinegar
1/2 tsp. water.........................................................1/2 tsp. Kosher salt
1/4 tsp. garlic powder............................................1/4 tsp. ground chipotle chili powder
pinch of ground thyme..........................................pinch of ground cumin
Whisk all together well in a small bowl. Refrigerate for at least an hour (covered) for the flavors to meld together. Makes about 1/2 cup
Use as a spread on sandwiches, tacos or fajitas, as a dipping sauce for taquitos or chips ~ or even as a salad dressing (although you may want to thin it out with a tiny extra bit of vinegar for a salad dressing)!
NOTE: If you don't have fresh cilantro, you can substitute about 1/2 tsp. dried cilantro flakes.
