A very FAST and EASY candy to make for Christmas! My measurements are enough to make an 8" or 9" square pan, which you would break into pieces and put into bags. Depending on how much you want in each little bag (which I bought at the dollar store), you should have enough for about 4-6 treat bags.
DOUBLE CHOCOLATE PEPPERMINT BARK
1/2 cup Dark Chocolate Melting Wafers (I use Ghirardelli ~ but you could also use dark chocolate chips)
1 cup white Melting Wafers (again, Ghiradelli ~ but could use white chocolate chips)
Remember that your candy is only as good as the chocolate that you use! So, I recommend that you do NOT use the big rectangles of chocolate or white almond melting "bark" ~ use a better quality chocolate for this.
about 1/2 to 3/4 cups crushed candy canes (NOT into a powder ~ you want chipped pieces. If you can find bags of the candy cane chips, that's easier than putting candy canes into a zip-lock baggie and pounding them with a hammer)

Line an 8" or 9" square pan with foil, parchment or waxed paper ~ extending up 2 sides to use as "tabs" later.
Melt the dark chocolate wafers in the microwave (mine took 60 seconds) and stir to melt them all. Spoon and scrape it all out (with rubber scraper), spreading evenly in the pan. Stick the pan into the fridge to harden (will just take a few minutes).
Then melt the white chocolate wafers in the microwave (mine only took 45 seconds) ~ stirring with a spoon to melt them all. Spread them evenly over the dark chocolate and immediately sprinkle the peppermint bits evenly all over the white chocolate. If necessary, pat them down into the white chocolate.
Put the pan in the refrigerator to harden up really well (I left mine in overnight). Then pull it out of the pan by the paper "tabs". Carefully break into pieces ~ you don't want them really big (but not itty-bitty either). Divide them up into little baggies.
