I used a sugar-free chocolate cake mix for these photos (my husband is diabetic), but it can just as easily be made with sugar products too. The cake is firm and moist (like a true pound cake) because of the cream cheese and sour cream in the batter. Just a light drizzle of glaze is necessary.
Dark CHOCOLATE CARAMEL Pound CAKE
1 box fudge or dark chocolate cake mix ~or~ 1 box Pillsbury sugar-free Devil's food cake mix................................................................................3 eggs
1/2 cup sour cream......................................................4 oz. cream cheese, softened
about 2 TB caramel flavored liquid coffee creamer (can be sugar-free)
1 TB caramel syrup or ice cream topping (can be sugar-free)
1 tsp. caramel extract..................................................1 tsp. instant coffee granules
1 TB DARK chocolate syrup (can be sugar-free)............1/3 cup vegetable oil
1-2 TB DARK unsweetened cocoa powder
GLAZE:
about 1/4 cup canned chocolate frosting (can be sugar-free)
1 tsp. DARK or sugar-free chocolate syrup
2 tsp. DARK unsweetened cocoa powder
caramel flavored liquid coffee creamer (can be sugar-free) ~ up to 1 TB, as needed

Preheat oven to 350. Spray the inside of a bundt or tube pan generously with non-stick baking spray (contains flour). Set aside.
Put all of the cake ingredients into your electric mixer bowl and beat until smooth and creamy (go at least 2 minutes ~ you'll notice a difference in color and texture then). Pour and spread the batter evenly into the prepared pan. Slam the pan down sharply on your counter (may want to put a towel down first) to break any air bubbles hiding inside.
Bake for about 30-40 minutes (or until a cake tester comes out clean). Let the cake cool in the pan on a rack for about 20-30 minutes; then invert it onto your serving plate and let cool completely before glazing.
GLAZE:
Mix and whisk the chocolate frosting, chocolate syrup and cocoa powder together in a small bowl. Whisk in the liquid coffee creamer (1 tsp. at a time) until it's a smooth, thick drizzle consistency.
