about 1 head of fresh broccoli (don't wash immediately before doing this)
2-3 tsp. chopped or minced garlic
2 TB extra-virgin olive oil
about 1-2 tsp. Kosher salt

Preheat oven to 375°. Put the oven rack about 2/3 up in the oven (I use the one above the center). Line a baking sheet with foil and give a quick spritz of olive oil non-stick spray.
Cut the broccoli into small (about bite-sized) florets, and chop any stalks that you have into about the same sized pieces. Toss the broccoli into a large plastic bag and sprinkle the chopped broccoli, salt and pepper over it. Hold (or seal) the bag closed and shake so that the broccoli is coated evenly. Then sprinkle the olive oil over the broccoli; close the bag and shake again until the broccoli is coated.
Spread the broccoli in one layer on the baking sheet, and bake for about 30 minutes. (If you remember, you can toss them around on the baking sheet with a metal spatula about halfway through the roasting)
