Creamy GARLIC BUTTER SHRIMP SCAMPI and RICE
1 cup long-grain white rice ~ prepare per package instructions
6 TB butter…………………………………..3-4 tsp. crushed or minced garlic
About 3/4 lb. cooked, peeled, deveined shrimp (medium to large size)
1/4 cup fresh grated or shredded Parmesan cheese
3 TB skim milk………………………………2 TB chopped fresh parsley
1/2 tsp. dried oregano……………………..1/2 tsp. minced fresh rosemary
About 1 tsp. Kosher salt………………….about 1/2 tsp. black or crushed red pepper

Prepare rice according to the directions on package, and set aside.
In large skillet, melt butter over medium heat. Add garlic and cook for 2 minutes, or until lightly browned, stirring frequently (be careful not to burn). Stir in shrimp and cook for 1 minute, stirring frequently. (Don’t overcook the shrimp!)
Add prepared rice to the skillet and mix until well combined. Add cheese, milk, parsley, oregano, rosemary, salt and pepper; mix and stir for 1-2 minutes, or until creamy and heated through. Serves 2-3
Note: To prepare ahead, put the completed shrimp & rice into a covered casserole dish, with about 1/4 cup (maybe a little less) water in the bottom. Reheat in the microwave for 4-5 minutes, until heated through.
