Copycat KRUSTEAZ LEMON SUGAR COOKIES
1/2 cup (1 stick) butter, softened….…………………..1 cup granulated sugar
1/2 tsp. Vanilla Extract…………………………………1 egg
1 tsp. Lemon extract………………………………….…1 TB Lemon Juice
1/4 tsp. Salt……………………………………….……...1/2 tsp. Baking Powder
1/4 tsp. Baking Soda…………………………….………1-1/2 cups All-purpose Flour
1/2 tsp. cream of tartar..........................................................2-3 drops yellow food coloring
TIP: If you want a very lemon flavor, you can also add about 1 TB lemon gelatin mix to the batter.

Preheat oven to 350. Line 2-3 baking sheets with parchment paper. ** prepare yellow sugar coating by putting the 1/2 cup granulated sugar into a heavy small zip-top baggie with the yellow food coloring. Seal the bag and squish the sugar with your fingers until it’s all evenly colored. Set aside.
In a large bowl, cream butter and sugar together until light and fluffy. Beat in vanilla, egg, lemon extract and juice. Scrape sides and mix again. Min in the rest of the dry ingredients slowly until just combined. Scrape sides of bowl and mix again briefly.
Using a small cookie scoop, put about 12 cookies on each cookie sheet. Lightly roll each scoop into a ball in your hand. ** Put the colored sugar into a small bowl. Roll the cookie balls in the colored sugar to coat and put back onto the cookie sheets.
Bake for 9-11 minutes or until bottoms begin to barely brown and the tops are slightly cracked. Remove from oven and cool cookies about 3 minutes before transferring to cooling rack. Makes about 2-3 dozen.
