2-1/2 cups unsifted flour
1/4 tsp salt
1 cup room temp. butter (unsalted is best)
1-1/4 cups sifted powdered sugar
2 egg yolks (use the whites for meringue cookies)
1 tsp ground cinnamon
1/2 tsp almond extract
1 tsp vanilla extract
few drops of red food coloring
red candy cinnamon hearts
Preheat oven to 350. Do NOT line your baking sheets or spray them with non-stick spray!! IMPORTANT! The dough needs to stick to the "naked" sheets when you squeeze it on ~ and the cookies don't stick to the sheet afterwards.
Sift (or whisk) together flour and salt. ** In a large mixer bowl, beat butter and powdered sugar until light and fluffy; beat in egg yolks, cinnamon, food coloring and extracts. Add flour mixture and beat until well mixed. (Dough will be thick ~ see photo)

Bake in preheated 350 oven for 6-9 minutes (or until just beginning to turn golden on bottom). Remove from heat and cool. Makes about 7 dozen. (I only made 6 dozen hearts; then changed the disk to make about 1 dozen flowers).
