(aka Frog in a Blender Soup)
1-1/2 cups water
3 cubes chicken bouillon
1 10-oz. package frozen chopped spinach (thawed)
1/4 cup flour
3 cups milk (or 1/2 & 1/2 ~ or cream)
1 TB minced onion
salt and pepper to taste ** Can swirl some sour cream through the top before serving

Melt butter in large saucepan over medium heat. Stir/whisk in flour and cook about 2 min (watch to be sure it doesn’t burn) ~ gradually whisk in milk (to make a roux). Season with onion, salt & pepper. Cook, stirring constantly, until thickened; stir in spinach mixture; heat until hot throughout. Serves 4
You could also substitute broccoli for the spinach (and a dash of nutmeg)
