Cilantro Lime Jalapeno Vinaigrette:
2 TB Extra-Virgin Olive Oil……………................2 TB white wine vinegar
2 TB lime juice……………………………....................1/2 tsp. honey
1/2 to 1 jalapeño, seeds removed & minced
1 tsp. Dijon or Spicy brown mustard
1 tsp. Kosher salt………………………..................…1/2 tsp. black pepper
1/4 tsp ground cumin
1 handful of cilantro leaves, washed with stems removed

Combine all ingredients in a blender, or food processor bowl. Puree or pulse ingredients together, until jalapeno and cilantro are finely chopped. Store in refrigerator in glass jar with a lid. Take out of refrigerator about 10 min. before using (in case the oil solidifies) ~ Shake before using.
