Be prepared for friends & family to ask you to make these every year! They'll become your "signature" treat for the Holidays.
If you can find Pecan Bourbon (mine is Revel Stoke), that's even better (it's not too expensive. There's also a Honey Bourbon, which would be good). At the Holidays, I usually have a container of egg whites in the refrigerator to make these (plus marshmallows and meringue cookies) ~ 3 TB egg whites in the carton = 1 egg white.
SUGARED BOURBON PECANS
1 pound pecan halves …..…...................1 egg white
1 tsp BOURBON……….….......................2 tsp cinnamon
1 tsp salt...................................................1/2 tsp vanilla extract
1 cup sugar

Preheat oven to 300. Line 2 rimmed large baking sheets with parchment paper. Set aside.
Beat egg white with bourbon & vanilla extract until foamy (I do this with a whisk in a big bowl ~ doesn't need to be peaks, just foamy). Mix pecans in egg white mixture until coated (I use a rubber scraper).
Mix together cinnamon, salt & sugar in a plastic bag. Put coated pecans into the bag ~ hold tightly closed ~ squish and toss until well covered with sugar mixture.
Try to spread as close to a single layer as possible on your baking sheets. Bake at 300 for 15 minutes. Then go in and flip them over (as well as possible) with a metal spatula. (If you have a single oven, you can put a pan on each shelf and rotate them halfway through). Bake for another 15 minutes. Then take the pans out and let them cool. Break the nuts apart and put into baggies (or candy dish).
