MOJITO Mint MELON BALLS
2 cups ripe, fresh honeydew melon balls (or cubes, if you don't have a melon baller)
1/4 cup white RUM .......................................1-2 TB honey (depends how sweet your melon is)
2 tsp. lime juice.............................................2 TB fresh mint leaves, chiffonade slivers

Put the melon balls into your serving bowl, and sprinkle with the mint shavings. In a small bowl, whisk together the rum, honey and lime juice. Pour over the honeydew melon and gently toss to coat well.
Serve immediately or keep in the refrigerator (good to toss the melon a few times, so you get all of the balls evenly coated while they're chilling)
