Preheat oven to 425°. Spray mini-muffin pans with non-stick spray (about 18)
Combine first 6 ingredients in a large bowl; make a well in center of mixture. Set aside. Combine eggs and next 3 ingredients, stirring well; add to dry mixture, stirring just until dry ingredients are moistened.
Spoon about 1 TB batter into each muffin cup (cups will be about three-fourths full). Bake at 425° for 10-15 minutes or until done. Remove from pans immediately. Makes 1-1/2 dozen mini-muffins

1 (8-1/2 oz) package Jiffy corn muffin mix
1 egg, beaten …………………………………………. 1/4 cup onion, chopped fine
1/3 cup milk ……………………………………………. 1/4 cup flour
1 tsp baking powder ………………………………… 2 tsp vegetable oil
Preheat oven & prepare pan per above recipe. ** Combine all ingredients together in a large bowl; mix with wooden spoon (stirring just until dry ingredients are moistened) ** Spoon into prepared pans and bake as per above recipe
