Baked BUFFALO TURKEY WINGS
2-4 smoked turkey wings ~ cut into wingettes and drumettes (you can use the tips too, if you want)
About 1-2 TB extra-virgin olive oil…….……...4 tsp. garlic powder
3 tsp. Kosher salt……………………………….2 tsp. ground black pepper
1 stick unsalted butter (melted)
1/2 cup hot sauce (like Frank's RedHot or Tabasco)
1/2 cup your favorite BBQ sauce (I like Stubb’s)
(NOTE: If you want your wings hotter, you can use 3/4 cup hot sauce and 1/4 cup BBQ sauce)

Preheat oven to 375. Line a rimmed baking sheet with foil ~ put a cooling rack onto the baking sheet and set aside.
Put the wing parts into a plastic bag (use a heavier one, like a gallon zip-lock baggie). Drizzle with the olive oil ~ zip the bag tightly closed; shake until all of the pieces are equally coated (you may need to use 2 baggies if you have too many wing pieces).
Now sprinkle the garlic powder, salt and pepper into the baggie(s); zip tightly closed and shake until all the pieces are equally coated in the seasoning.
Lay the wing pieces in a single layer on the cooling rack in the pan. Bake in preheated oven 30 minutes. Increase oven temperature to high broil (leaving wings in oven); broil 5 minutes. Flip wings; broil 5 minutes. Flip wings; broil until wings are crispy
Meanwhile, whisk together the melted butter, BBQ sauce and hot sauce in a rectangle pan. Put the cooked wings directly from the broiler into the buttery hot sauce and roll around in the sauce until the wings are coated. Spoon it over the wing parts, to get into the crevices (especially the drumsticks). I put them back onto the rack then, and spooned a little more sauce onto them.
Ready to eat! Serve with Ranch or Blue Cheese dressing .... and big bandanas or washcloths to use as napkins!
