PEANUT BUTTER SNICKERDOODLES
1-1/2 cups all-purpose flour………………1 tsp. cinnamon
1/2 tsp. baking soda……………………….1 tsp. cream of tartar
1/4 tsp. salt…………………………………1/2 cup sugar
1/2 cup (8 TB ~ 1 stick) unsalted butter, softened
1/4 cup dark brown sugar………………….1 egg
1 tsp. pure vanilla extract………………….1/2 cup creamy peanut butter
CINNAMON SUGAR:
2-3 TB granulated sugar (can add some colored sugar for Holidays)
1 tsp. ground cinnamon
Whisk together in a small bowl and set aside

Preheat oven to 350. Line baking sheets with parchment paper and set aside.
Whisk together flour, cinnamon, baking soda, cream of tartar, and salt in a medium bowl & set aside.
In your electric mixer: cream together butter, granulated sugar, and brown sugar for about 1 minute or until well combined. Then mix in egg, vanilla extract, and peanut butter. Scrape down sides of the bowl and paddle.
Gradually add the dry ingredients (on low) ~ then beat on medium-high until the dough somewhat forms around the paddle. .
Use a small cookie scoop (about 1-2 TB or 1-1/2" across) to make cookie balls (roll in your hands), and put them on the baking sheets about 2” apart. (I do all the balls so I can adjust the sizes, as needed). Roll each ball in the cinnamon sugar and put back on the baking sheets. Flatten slightly. (I used a glass with a slight design, which shows a little when the cookies are baked.)
Bake about 9-11 minutes (or until just set.) Remove from the oven and cool on the baking sheet for 10 minutes, then put on rack or paper to cool completely.
Makes about 2 dozen cookies.
