Spicy TEX-MEX BROCCOLI SLAW
1 package shredded broccoli slaw
1/4 white onion, thinly sliced
2 small sweet mini chilies, seeded & sliced (red, orange and/or yellow)
1/2 jalapeno chili pepper, seeded and minced
2-3 TB fresh cilantro, chopped
1/2 cup mayonnaise..................................................1/4 cup Southwest or Spicy mustard
1 TB cider vinegar......................................................1 tsp. sugar
1/2 tsp. cumin............................................................1/2 tsp. smoked paprika
1/2 tsp. chili powder..................................................1/2 tsp. hot sauce
1 tsp. Kosher salt.......................................................1/2 tsp. black pepper

Combine the broccoli slaw, onion, cilantro, and chilies in a large bowl. In a large bowl, whisk together the mayonnaise, mustard, vinegar, hot sauce, spices, salt, pepper and sugar. Add in the broccoli slaw, onion, cilantro and chilies. Toss gently to mix (make sure to get all the dressing from the bottom of the bowl ~ a rubber scraper works well). It's best if you chill for about 2 hours in refrigerator before serving.
