You can use whatever type of dressing you like best, but we prefer a good vinaigrette (Girard's makes great vinaigrette dressings). I made a salad big enough for my husband as his main dish, but he's a big eater, so it might be enough for 2 people with smaller appetites.
Traditional CHEF'S SALAD
I/2 small iceberg lettuce, thinly sliced (and then I like to chop it)
1/4 sweet white or yellow onion, chopped....................2-4 radish roses (optional)
2-4 hard-boiled eggs, cut in half...................................6-10 cherry or grape tomatoes
3-4 slices cheese (I used Gouda), cut into thicker matchstick slices
Choose 2 of the following:
about 1/3 to 1/2 cup ham, chicken and/or salami, cut into matchstick slices
Optional: parsley to garnish
Optional add-ins: You may also want to toss in: capers, olives, artichoke hearts
Your choice of dressing (we prefer vinaigrette)
Toss the lettuce and onion together in the bottom of a large single-person serving bowl ~ then arrange the other ingredients on top. It's traditional to put the meats and cheese in lines. Garnish with the hard-boiled eggs, radish roses, cherry tomatoes & parsley.
I let my husband drizzle his salad dressing on as he wanted it.
Since there's no starch in here, you can serve bread or rolls with it.
