LOADED MASHED POTATO SALAD
I had about 3/4 to 1 cup leftover mashed potatoes
1 large Russet potato (cut into small pieces, with peel left on & boiled until soft)
2-3 green onions, chopped
3 pieces of thick Applewood smoked bacon, cooked & crumbled
1 stalk celery, diced
about 2 TB fresh parsley, chopped
about 2 tsp. Kosher salt (or to taste)
about 1 tsp. fresh ground pepper (or to taste)
about 1/2 tsp. smoked paprika
about 1 tsp. Tony Chachere's Creole seasoning (or to taste)
1 tsp. dried basil leaves

about 1/4 cup store-bought Ranch or Cucumber salad dressing

Put everything into a bowl and gently stir together (I used a rubber scraper) until blended well. I sprinkled a little extra smoked paprika on top.
