STRAWBERRY CHOCOLATE CHIP OATMEAL COOKIES
1 box yellow, white or butter cake mix (can be sugar-free)
1 stick (8 TB) butter, melted...……………...…………..2 eggs
2 TB strawberry jam (can be sugar-free)………………..1/2 cup oats (not instant)
1/4 cup Rice Krispies.........………………...............….1/4 to 1/2 cup chocolate chips (can be sugar-free)

Preheat oven to 350. Line baking sheets with parchment paper and set aside.
Put cake mix, butter, eggs and strawberry jam into electric mix on low and mix until cake mix is somewhat mixed in; then turn on high and beat until well combined. Turn to low and beat in oats until combined. Then add the Rice Krispies and chocolate chips and mix until well combined. Don't forget to scrape down the sides and get way down into the very bottom of your bowl too!
I use an ice cream scoop to make balls about 2" in diameter (I shape them in the palm of my hand), and put 6 balls on each baking sheet. Then press them flat with your hand (or a plastic lid that's about 3" wide) into 2-3" cookies. Bake for 9-10 minutes. Cool on the pan about 5 minutes before removing to rack or paper to cool completely.
Makes about 1-1/2 to 2 dozen cookies.
