Glazed BANANA Baked DONUTS * sugar or sugar-free
1 cup flour……………………………….….1-2 tsp. baking powder
(Amount of baking powder depends how light or dense you want the donuts)
1/4 tsp. salt……………………………….…1/2 tsp. ground cinnamon
1/4 cup granulated sugar ~or~ regular white Splenda
1 egg, at room temperature……………...1 tsp. vanilla
1 large ripe, banana (mashed) ~ reserve 1 TB for the glaze
1/3 cup milk (any type, including buttermilk ~ I like unsweetened vanilla almond milk)
TIP: You can also substitute Hazelnut liquid coffee creamer (sugar or sugar-free) for the milk in the donuts and glaze.
GLAZE:
1 TB mashed banana……………………..1 TB milk
3/4 cup powdered sugar (or 1/2 cup Splenda whisked with 1/4 cup cornstarch)
Dash of cinnamon

Pre-heat the oven to 400. Spray your donut pan with non-stick baking spray.
In a large bowl, combine the flour, sugar/Splenda, baking powder, salt and cinnamon. In a separate bowl, whisk together the egg, melted butter, milk, vanilla and mashed banana. Mix the wet ingredients into the dry with a wooden spoon.
Spoon the batter into the donut pan and smooth the tops of each donut (batter will probably come to the top of each donut opening). Bake for 10-12 minutes until golden, and a toothpick comes out clean. Allow to cool slightly before turning out of the pan.
While the doughnuts are cooling, whisk together the milk, banana, powdered sugar, salt and cinnamon. Once the donuts are cool, about 20 minutes, dip in the glaze. Makes 6 big donuts.
TIP: Make the glaze in a flatter bowl, that will fit the donut when you dip the tops.
