SWEDISH MEATBALLS
Meatballs
(or, if you're feeling lazy, just grab a smaller bag of frozen meatballs {thaw them out} and use those. If they're already cooked, skip the step about baking them first.)
1 lb. extra-lean ground beef (mine is 96/4 ground sirloin)
1/4 cup panko…………………………………………1 egg
1/4 cup regular milk, or unsweetened almond, oat or cashew milk
1 TB fresh parsley, chopped…………………….….2 tsp. dried dillweed
1/2 tsp. garlic powder…………………………...…..1 tsp. Kosher salt
1/2 tsp. black pepper…………………………….…..1/4 tsp. ground nutmeg
White Sauce
1 1/2 tablespoon olive oil
1/3 cup diced white or yellow onion…………….2-3 TB flour
1 cup beef broth ~or~ 1 cup water w/ 1 tsp beef "Better than Bouillon"
1 cup regular milk, or unsweetened almond, oat or cashew milk
Kosher salt and black pepper to taste………….1 tsp. balsamic vinegar
1 small container (abt 5 oz) plain Greek yogurt ~or~ little over 1/2 cup non-dairy sour cream
2 TB fresh parsley, chopped............................... 1 tsp. dried dillweed

Preheat oven to 400. Line a baking sheet with foil; spray with non-stick spray.
Combine all meatball ingredients together in large bowl and combine with your hands. Form into about 20 meatballs (1-1/2 TB size) and put on the baking sheet. Bake for about 20 minutes. Meanwhile…
Heat olive oil in skillet ~ add diced onion and sauté for 1-2 minutes or until softened. Whisk in the flour until smooth and cook for 1 minute. Slowly whisk in the beef broth and milk; then whisk in the salt, pepper, balsamic and thyme. Bring to a boil ~ whisking continuously, until the sauce thickens. (You may need to whisk in another TB of flour, if it isn't thickening up enough for you.) As it thickens, you'll notice that it leaves a ring around the side of the pan, so keep scraping that back into the pan with your whisk.
Once the sauce has thickened remove it from the heat and slowly add in the Greek yogurt whisking until smooth. Whisk in half of the parsley. Add the meatballs into the sauce and top with the remaining chopped parsley.
Serve the meatballs and sauce over plain wide egg noodles or mashed potatoes.
