It can be a dessert, but Mom served it as a side dish with pork or ham, usually (definitely NOT the way my New York grandmother would have served it!) **
It's really good ~ soft noodles underneath with a creamy, fresh APPLE and RAISIN filing, and a little crunchier on top **
“Noodle Kugel”
1 8-oz. package broad noodles (cook and drain)
3/4 cup raisins (I like golden) ~ soak in warm water to plump
1 stick butter, melted
1/2 cup sugar
2 eggs, beaten
1 cup sour cream
1 large apple (peeled and sliced)
Drain noodles and raisins. Mix all ingredients together and put into buttered/sprayed 2-qt. casserole. Bake at 350 for 1 hour. Serve as side dish (especially good with pork or ham:) Serves 8-10
