ALMOND PISTACHIO MUFFINS
Quick and Easy Recipe
1 box white cake mix ……………………………1 box of instant pistachio pudding
1/2 cup water ……………………………………..….1/2 cup vegetable oil
1/2 cup buttermilk………………………..………….2 eggs
1/2 TB almond extract …………………………….green crystal sugar
Sliced almonds
Sparkling or Sanding sugar to top the muffins (optional) for a crunchy top
**OR** cinnamon sugar to sprinkle on top
Preheat oven to 325. Put paper lines into 12 muffin/cupcake tin.
In large mixing bowl, add cake mix along with instant pudding; set aside. In small mixing bowl, mix all wet ingredients together. Slowly add wet ingredients into mixing bowl (with cake mix and pudding). Stir to completely blend.
Fill muffin holes in pan 3/4 full. Sprinkle some sliced almonds on top. Sprinkle whatever sugar on top of every muffin (Sparkling for a crunchy, sugary top)
Put muffin pan in oven for 10-15 minutes. Test a couple of muffins with toothpick ~ If the toothpick comes out wet, let bake for a couple more minutes. Take out of oven and cool. Makes 12 muffins

Long Recipe
1-1/2 cups all-purpose flour ………………........ 1/4 tsp baking soda
1-1/4 cup sugar …………………........……………. 1/2 cup butter melted
2 eggs …………………………………..........……….. 3/4 cup buttermilk
1 TB almond extract…………………………........ 6 drops green food coloring
1/4 cup pistachio nuts (finely chopped) ….... green crystal sugar
Sliced almonds
Sparkling or Sanding sugar to top the muffins (optional) for a crunchy top **OR** cinnamon sugar
Preheat oven to 325 degrees. Line 12-hole muffin pan with paper liners.
In a large mixing bowl, add all dry ingredients and set bowl to the side.
In a small mixing bowl, mix all wet ingredients together well. Slowly add wet ingredients into large mixing bowl. Add pistachios and green food coloring. Continue to stir for a couple minutes, until it’s well blended.
Fill muffin pan holes 3/4 full. Sprinkle sliced almonds on top. Sprinkle whatever sugar on top of every muffin. Bake for 10-15 minutes. Insert toothpick in a couple of muffins to test ~ If toothpick has raw muffin mixture on it let cook for a couple more minutes. Take out and cool on wire rack about 10 min. Makes 12 muffins.
