Cotton Patch BAKED SQUASH CASSEROLE
6-7 summer squash (zucchini, crookneck, pattypan, etc)
3/4 cup seasoned bread crumbs (or 3 slices white bread, crumbled)
1 egg …………………………………............2 tsp white sugar
2 tsp sea or Kosher salt ………..........……. 2 tsp garlic powder
1 tsp dry basil ……………………................1/2 tsp black pepper
1/4 cup fresh grated Parmesan cheese
1/2 cup grated mozzarella or provolone cheese
4 TB softened or melted butter

Cut squash into chunks and put into a 2-1/2 to 3 qt. baking dish. Microwave 5-6 minutes (covered) until soft. Slightly mash the squash (with potato masher or fork); leave the liquid in the dish.
In a small bowl, whisk together the rest of the ingredients (except cheeses and bread crumbs). Now, mix ALL ingredients together with squash in baking dish. Bake at 350 for about 45 minutes, until slightly puffy and cheese is all melted. Serves 4
