Cotton Patch is famous for their wonderful Baked Squash Casserole. It has ZUCCHINI * YELLOW Crookneck * and * PATTY PAN * summer squash in it, plus CHEESE.
There's also bread crumbs to make it sturdy ~ I used less than the recipe called for in mine (to keep the calories down), so it wasn't stiff enough to serve in balls. photos on left courtesy of Cotton Patch |
6-7 summer squash (zucchini, crookneck, pattypan, etc)
3/4 cup seasoned bread crumbs (or 3 slices white bread, crumbled)
1 egg …………………………………...........................2 tsp white sugar
2 tsp sea or Kosher salt …………...............................2 tsp garlic powder
1 tsp dry basil ………………………........................... 1/2 tsp black pepper
1/4 cup fresh grated Parmesan cheese
1/2 cup grated mozzarella or provolone cheese
4 TB softened or melted butter
Cut squash into chunks and put into a 2-1/2 to 3 qt. baking dish. Microwave 5-6 minutes (covered) until soft. Slightly mash the squash (with potato masher or fork); leave the liquid in the dish.
In a small bowl, whisk together the rest of the ingredients (except cheeses and bread crumbs). Now, mix ALL ingredients together with squash in baking dish. Bake at 350 for about 45 minutes, until slightly puffy and cheese is all melted. Serves 4
