1 cup unsalted butter, softened...................................1/2 cup sugar
2-1/2 cups flour...................................................................1 tsp almond extract
1/2 package pumpkin pudding mix (if you can't find it, you can use butterscotch)
3-4 drops EACH red and yellow food coloring...................orange colored sugar
Green decorator icing (squirt type ~ storebought)

Preheat oven to 350. Line baking sheets with parchment paper. Put the orange colored sugar in a small bowl or saucer, and set aside.
Cream together butter, pumpkin pudding mix and sugar in your electric mixer. Beat in flour, food coloring and almond extract until mixture comes together and is smooth.
I used about 3/4 of a small cookie scoop to make about 1" balls (then roll them into balls in your hand). Dip the tops of the balls into the orange sugar. Then, using a small sharp knife, make 5 indentation/slits from the top of the ball down the sides.
Put the pumpkins on the cookie sheet (they won't spread, so you can probably get 4 rows of 4 pumpkins on each large sheet). Bake 18-20 minutes or until set but not brown. Remove from cookie sheet to wire rack. Cool, and then just put a dab of green decorator frosting in the center of the top (for the stem). Makes 3-4 dozen.
NOTE:
You can make other shapes too! Just change the flavor and colors. ** Use banana pudding to make bananas ~ cherry, strawberry, or orange jello mix to make fruit.
