These lime cookies start with a white cake mix and have lime jello mix in them, with Rice Krispies and white chocolate chips. LIME White CHOCOLATE CHIP Crunch COOKIES
1 box white cake mix...……………………………….1 stick (8 TB) butter, melted
2 eggs...……………………………………………………..1 small box lime gelatin (2 TB for cookies ~ 1 tsp. for glaze)
1 cup Rice Krispies cereal...…………………………3/4 cups white chocolate chips
2 TB flour
optional: 2-3 drops green food coloring
GLAZE:
3/4 cup powdered sugar...…………………………about 1 tsp. lime gelatin powder
liquid as needed (milk, coffee creamer {even flavors such as Italian Sweet Crème or Crème Brulee})

Preheat oven to 350. Line baking sheets with parchment paper
Put the cake mix, melted butter, eggs, lime gelatin and flour (plus green food coloring, if you think you need it) into your electric mixer bowl and beat until it starts to come away from sides of bowl. Scrape down the sides of the bowl and gently fold in the white chocolate chips and Rice Krispies.
I use about 3/4-ful of a small cookie scoop to make balls on my baking sheet ~ then go back and flatten them down a little so they're uniform in size. Bake about 9 minutes, until the top is firm but they're not yet turning brown. Let them cool a couple of minutes on the pan before removing to rack or paper to cool completely.
While you're waiting for all of the pans to bake, whisk together the powdered sugar & 1 tsp. lime gelatin ~ whisking in whatever liquid you're using, 1 tsp. at a time until you get a thick, smooth drizzle consistency. Then drizzle on top of the cookies and put the sprinkles on top. (I drizzle 6-8 at a time and do the sprinkles, so the glaze doesn't dry & harden before I get the sprinkles on.)
Makes between 2-1/2 to 3-1/2 cookies (depends how big you make them).
